Included below are some of our weekly meal plans.   A few things regarding our meal plan:  we used to have a CSA through Full Circle Farms (when we lived in Seattle) which provided us fresh, seasonal, produce at our doorstep once a week. Now that we are in Denver, CO we try to buy seasonal and local produce to plan our meals around. Generally, I only make one meal per day and we snack on leftovers and breakfast items.  I make a lot of side dishes but don't often post them to the meal plan.  Our meals are balanced and I try to make sure we all eat (kids included!) TONS of veggies and fruit!  Dale and I are vegetarians and make vegan choices (swapping out dairy and eggs when able).  We allow the kids to make their own food choices as long as it is healthy and meeting their needs.  They eat meat often at lunch or if we are out to eat but even they are starting to be more conscious about eating healthy for them and making Earth friendly choices. 

Below are some sample menu plans I did before switching to a veggie diet.  I tried to include links on some but mostly just wanted to share our sample plans as inspiration for others!

Saturday:  BBQ Pork spareribs, w/ french fries and mizuna salad
Sunday: Pan-fried Chicken w/ a beet green salad and roasted beets
Monday: Chicken burgers w/ guacamole
Tuesday: Turkey Korma w/ dal and naan
Wednesday: Veggie Lasagna
Thursday: Leftovers

Breakfast/Snack Items:  Papaya jam, french toast, french bread, cheese, greek yogurt w/ fruit and guacamole

What's in our produce box this week?
Mizuna greens, beets, celery, avocados, spring red onion, kale, nectarines, oranges, zuchinni,  plus I purchased potatoes, yellow onions, strawberries, and a papaya (random, I know.)

6/15-6/21

Friday: Mexican Spaghetti
Saturday: Black bean burgers (basic recipe) I add chard, cilantro, lots of spices, and sometimes rice (these freeze beautifully!!)
Sunday: Chicken roasted w/ squash, carrots, onions and steamed artichokes w/ homemade bread
Monday: Pizzza w/spinach, garlic, onion, mushroom and whatever else is left in my fridge :)
Tuesday: Ahi Tuna w/ brown rice arancini and sauteed chard
Wednesday: Tuerkey w/ mashed potatoes and steamed broccoli
Thursday:  French onion soup w/steamed veggies

Breakfast items: oatmeal w/strawberries & milk, scrambled eggs w/sauteed spinach & mushrooms, french toast w/nectarines
Snacks: hummus, crackers, roasted carrot dip, shredded chicken, tortillas, etc


What's in our produce box this week?  
Potatoes, chard, onion, mushroom, artichokes, spinach, crookneck squash, strawberries, nectarines, plums.  Plus our garden gave us cilantro and bok choy :)
